I love tofu banned from liscence plates


My wife and I have been at this for seven months now and it is fun and easy. We have dropped a ton of weight (not 2000 pounds) and cooking is now fun.

My wife turns 40 this spring and I will surprise her with Vegan Sushi.  It will be a real surprise because she contributes most of the recipes here. I just cook.

This here is my our scratch pad to help me us gather recipes, ideas and useful links. *****Stars indicate we have tried them.

MAIN COURSES

• Pho -*****starting to get decent at Vietnamese cooking. This soup is delicious and rather simple. 
• White bean, kale, and vegie sausage soup ***** another simple, but incredibly delicious, dish.
• Tofy Bahn Mi   *****WOW - quite possibly the best sandwich we've ever had.  So delicious.
• Making Cauliflower Your Main Course...mmmmm ****This was delicious.
• There can never be enough lentil recipes  ****Served this over a bed of rice with a side of kale.  It was very good - a little sweet because of the coconut milk.  I will make a double batch next time to make sure we have plenty for leftovers.
• Simple and delicious. Meatball Pizza **** Mark made fun of me for using a recipe for this very basic meal, but he did say it was my best pizza yet.  Sad, but true.  New comfort food for us, I believe.
• Wonderful Pad Thai Recipe ****
• Killer Mac and Cheese  ****Amazing and addicting
• The first time I used cashews to make a cheese sauce - Blackened Tofu in Cajun Cream Sauce ****
• Shiitake Brown Rice Noodle Soup
• Cheesy Spinach Cilantro Rice****This was surprisingly good, but not our favorite.
• Vegan Spring Rolls ****(These are a huge hit in our household)
• Toasted Quinoa Vegetable Stacks with Green Goddess Dressing
• Vegan Spinach and Tofu Enchiladas
• Vegan Black Bean Burgers ***** Even meat eaters love these burgers

• Brown Rice, Spinach, and Mushrooms - this will have to be a dinner when Riley is not home :)
• Mmmmm - love sage!
• Butternut Squash Rigatoni  I love this recipe, I did not love how it turned out.  I will try and find ways to thicken the sauce a bit...and perhaps I did not use enough squash.

Clean Out the Fridge Improvs

• Vegan Chilli  I am so jealous of my husband's ability to improvise with cooking - I must have a recipe.
• Vegan Shepherds pie.  Amazing.  We have found our favorite "fake meat" to be from Trader Joe's.
• For the love of the spud. The poor overlooked potato.

SALADS, FINGER FOODS, BREAD, VEGIE DISHES

• Soy Coffee Creamer - easy to make and great substitute for a chemical-filled coffee creamer with a 975 year shelf life.  Still, however, going to continue searching for a recipe that does not include oil.
• Great squash recipe just in time for Thanksgiving
• Spinach Artichoke Dip
• Good Bread Recipe
• Spicy Sweet Potato Salad   
• Curried Hummus Dip
• Caponata Crustini
• Crab Cakes and Roasted Corn Salad
• Quinoa Salad ****  Huge hit in our household.  Still the most frequently requested "vegan" meal from Riley.
• Kale chips - not ready to give up on it because I do not think I followed the recipe correctly,  but not my favorite at this point.
